It's unbalanced, sure, but every fighting game was in those days. CvS2 is my idea of the perfect 2D fighter, with a boatload of characters, team building, a bunch of super move options, and great sprite art. VF4 Evo has an amazing tutorial that will actually teach you to play VF, even if you aren't typically a fighting game person, and some of the best single player content I've ever seen in a fighter in its Quest mode, as well as a fun anniversary mode where the modern game gets redone in the classic VF1 style, flat-shaded polygons and all. On the fighting side of things (I'm a big fighting game guy), you can't go wrong with Virtua Fighter 4: Evolution for a 3D game, and Capcom VS SNK 2 for a 2D one. It was also developed by Level-5, who made Rogue Galaxy, Dark Cloud, and have currently been working on things like the Professor Layton series and Fantasy Life on 3DS. It's super traditional, like a SNES game, but with beautiful cel-shaded graphics and well done voice acting. Also, if you haven't played a Dragon Quest game (they're super mainstream in Japan but not anywhere else), Dragon Quest VIII is one of my favorite RPGS ever made. Agreeing with whoever mentioned Rogue Galaxy, it's a great RPG.
